With so many nutritionists and medical experts recommending heart
healthier foods, steamed chicken and asparagus are a great choice for
your health and your taste buds.
The advantage of using a steamer is that it is quicker than baking the
chicken and safer than cooking it in a microwave. Microwaves often don’t
cook foods evenly and this can leave dangerous bacteria in the chicken.
Plus, experience shows that micro waved meats and poultry can be a
little tough.
The benefit of using a food steamer for the asparagus is that it retains
much more of the vitamins than boiling does; over twice as much. So it’s
a no-brainer that you should either eat your vegetables raw, or steam
them as often as you can. Just be sure you don’t steam them until they
are mushy.
This very basic recipe makes for an easy meal because there is very
little preparation and the cooking time is short. You will be steaming
both the chicken and the asparagus at the same time in the same steamer.
The recipe is basically two servings, or one serving for a big eater.
You can always add more chicken and asparagus if you need a larger meal.
Additionally, you can use most any vegetable you like along with or
instead of the asparagus. Cauliflower, broccoli, carrots and many other
vegetables will work.
Simple Steamed Chicken and Asparagus
Ingredients:
2 large boneless skinless chicken breast halves
500g of fresh asparagus
salt and pepper
Procedure:
Add about a cup or two of water to the food steamer and bring it to a
boil.
While you are waiting for the water to boil, trim the asparagus by
cutting off the tough stock. You don’t have to cut them all the way up
to the tips – try to use as much of the stock as you can, but you
definitely don’t want to eat the fibrous lower part of the stock.
Rinse the chicken in cold water and add salt and pepper to taste. You
can add any spice you like, garlic, thyme, rosemary, but sometimes
simplicity is best. Wait until after the asparagus is done cooking
before you add salt and pepper to it. They won’t stick to it while it’s
dry.
Once the water is boiling, place the chicken and the asparagus side by
side on the food steamer rack and steam for 10 to 15 minutes. You want
the asparagus to be just a little crisp and the chicken to be done but
not overly done. Stick a knife in the center of one of the breasts and
if the juices run clear the chicken is probably done.
This is a perfect dish to serve with a side of brown rice. In fact, if
you have a rice steamer, you can make it in that.
